This Direct Trade honey-process coffee is a light roast with notes of yellow apple, almond, and cocoa powder. Nueva Vida is truly a small-scale family operation. Aside from Asdrubal Leonidas Apolo, his daughter Mireya, and her husband Freddie, the family employs 3-4 pickers during harvest. Asdrubal provides them with a weekly wage rather than paying based on the weight of cherries picked.

All his coffee cherry is honey processed on raised and covered beds. The cherry is floated and then fermented in covered tanks for 70 hours. It is then depulped without water and taken straight to the raised beds where it is rotated during a two-week drying period. The lot is predominantly Sarchimor and Acauã.

Each 0.5oz pouch brews 8oz of hot coffee. Pouches are nitrogen-flushed for 6 months of shelf life and filters are commercially compostable.

1) Heat water to 195-205F.

2) Tear open pouch from notch in upper-right corner.

3) Remove filter from pouch and tear along top perforation.

4) Expand the arms of the filter and secure them onto your mug.

5) Slowly pour hot water over the coffee in the filter in stages until your mug is full. (Pouches are calibrated to brew an 8oz cup of coffee.)

6) Discard filter and enjoy your pour over!
