This juicy and fruit-forward natural features aromas of cherries and blueberries, caramel, almond, and violet. When sipped, we noted flavors of dried blueberry, apple juice, and shortbread, buoyed by a purple grape acidity before sweetening into a finish of milk chocolate, dried mango, and a hint of coriander.

"Established in 1960, Cooperativa de Caficultores de Dota R.L (CoopeDota) is an exceptional coop committed to its members and the environment. Nearly 1,160 producer-members living in San José Province focus their attention on farm management throughout the year and then deliver their cherry to the CoopeDota mill, where traceability and quality control are second to none.

"This particular lot comes from a group of ten farms above 1,800 masl in the micro-region called El Vapor, named after the plumes of water vapor produced when the warm air coming from a local sawmill collided with the cool mountain air. Coffee cherries are carefully hand sorted and floated to remove less dense coffee beans and then placed on raised beds and dried in the sun to 11 percent moisture content.

"This natural process highlights CoopeDota’s commitment to reduce water use and expertise in precise drying protocols. CoopeDota has a first of its kind certified carbon-neutral mill, which features hydro-powered energy consumption, water efficient eco-pulpers (also called a demucilager), and mechanical coffee dryers fueled by coffee parchment."

All of our coffees are roasted to order. Orders placed before 4PM Central roast + ship the next business day. Orders placed after 4PM Central on Thursday will roast + ship on Monday.

We recommend ordering Whole Bean and grinding just before you brew for best results. But if you don't have a coffee grinder yet, we're happy to grind it for you. We offer four grind sizes:

• Espresso: a very fine grind suitable for home espresso machines.

• Fine: a fine grind suitable for single-cup pour overs with a cone filter.

• Auto: a medium grind suitable for automatic drip coffee makers.

• Coarse: a coarse grind suitable for French press, cold brew, and percolators.
