Extending the roast development on Juan Diego de la Cerda's Red Bourbon yields a velvety cup with rounded sweetness. Aromas of roasted hazelnut and baked apple introduce notes of semi-sweet chocolate and cherry pie in the cup. The finish features nougat and a touch of tarragon.

The Red Bourbon varietal is known for its well-rounded cup quality with pronounced sweetness. While we typically roast single-origin coffees light to light-medium, we opted for a change of pace and took this offering to a medium roast. The result is more sugar caramelization and a rich, velvety body, while retaining fruit tones and a pleasant pop of acidity. Enjoy!
