A soft and silky coffee with aromas of persimmon, cane sugar, and nutmeg. When sipped, we found the persimmon persisted in the cup alongside flavors of guava, honey, and almond. Bright green grape acidity balances the silky body, culminating in a finish of white tea, nutmeg, and cooling eucalyptus.

"Fidel is a third-generation coffee farmer, having grown up surrounded by coffee. After finishing high school in 2004, he chose coffee as his path. His father gave him one hectare of the farm to start his own production. At the age of 21, he married and started his own family. Through hard work, he was able to purchase two more hectares of land, where the varieties he planted have yielded good results. Focused on producing high-quality coffee, he had an internship in Costa Rica in 2017, where he learned new techniques that he implemented on his farm. For Fidel, the farm is a business in which he eventually wants to involve his children and leave them a legacy.
"This path in coffee has allowed him to provide a better quality of life for his family, including paying for the education of his three children. He has also achieved recognition, such as placing third in the Cup of Excellence Peru in 2021 and consistently ranking in the top 5 of the coffee competitions in Cajamarca.
"For his coffee process, Fidel begins with careful manual picking of the ripe cherries, which are taken to the wet mill on the farm. There, he floats the cherries to remove any defective ones and any foreign material, such as leaves. He first ferments the cherries in bags for 20 hours before pulping. After pulping, he places the coffee in GrainPro bags for a 35-hour fermentation and then washes it. The drying process for washed coffee takes 15 to 17 days in his solar dryer."
