José Axel Vargas Gómez, 52, continues his family's legacy at Finca La Milagrosa, nestled in the mountains of Boquete, Chiriquí, at 1,585 meters above sea level. He inherited his passion for coffee from his father, Alfredo Vargas, and his late brother Tito, who founded the farm. For Axel, coffee farming has been an integral part of his life since youth, and on his 4-hectare farm, he cultivates varieties like Caturra, Catuai, Typica, Pacamara, and Gesha. The meticulous, artisanal process at La Milagrosa reflects his commitment to quality. From hand-picking the coffee cherries to using traditional machinery for depulping, each step is designed to preserve the essence of the beans. The result is a coffee with a distinctive profile, featuring vibrant acidity, notes of lemon, passion fruit, dark chocolate, and red fruits, making it stand out in the market. La Milagrosa's coffee has earned national and international recognition for its exceptional complexity and flavor, embodying the rich coffee tradition of Panama.
Creativa Coffee District in Boquete, Panama, has transformed a traditional wet mill and drying patio into a state-of-the-art processing facility, creating a community with coffee growers committed to sustainable practices.
This lot was processed via the "Chilled Cherry" method:
"Chilled Cherry is an process that highlights the fruit's intensity. We ferment whole cherry at a low temperature, resulting in a slow process to truly make the yeasts struggle and work through every last bit of sugar.
"This fermentation process can take upwards of a week and allows for a clean yet funky character. Aerobic ferments can lead to brown and dried fruit character and anaerobic can lead to leaner, acid-driven cuppings. Chilled cherry rides a line between the two, producing well-balanced and rich profiles."
