Gabriel’s farm, named Encino Colorado, spans two hectares, one of which is cultivated with coffee while the other is left untouched to allow endemic species to flourish. Perched high on the rainy side of the Sierra Norte, the tallest mountain range in Oaxaca, the farm offers expansive views over the Oaxacan highlands.\u003c\/p\u003e\n\u003cp class=\"p1\"\u003e“This lot consists entirely of the Typica variety. It is processed using the washed method, with a traditional fermentation lasting between 24 and 48 hours, followed by drying over the course of five days. The coffee comes from a specific plot within the farm named El Encino, located at 1,650 meters.
