Juan José Ernesto is a fourth generation coffee farmer who has been working in coffee since 1995. After graduating college, Ernesto was looking for ways to apply his experience in the coffee industry. He has been actively involved in the El Salvador Cup of Excellence competition and is known as a Star Cupper in El Salvador. Ernesto has earned Q Grader certification form the SCAA and the Coffee Quality Institute.
Finca Los Andes and La Ilusión are located high in the foothills near the Santa Ana volcano in the Apaneca Ilamatepec Mountains at an average elevation of 1750 meters. Both farms are bordered by one of the most important natural reserves in El Salvador, Los Andes National Park. The park’s dense forests provide a natural wind break that helps maintain the unique micro-climate, ideal for producing great coffee.
Ernesto has been focused on improving the harvesting and wet milling process. He supervises the process from planting, to harvest, to milling and trains his workers through the process to ensure he produces a great coffee. After harvesting the ripest cherries, the coffee is then sorted and selected again to ensure only the ripest cherries are sent to processing.
The attention to detail and focus on quality paid off big in 2008 when La Ilusión received 1st place in the 2008 Cup of Excellence Competition.
